It was a total pleasure to virtually join the RIXO gang for an Instagram takeover this week. I’ve been a fan of RIXO’s stunning retro-inspired print designs for a few years now and their dresses are my go-to for celebrations and weddings. I always try to start the day with some form of movement and find that exercise such as yoga really helps me to stay mentally balanced. This is something that’s especially important during lockdown. I love using simple, fresh ingredients and nothing says ‘good morning’ quite like just-squeezed orange juice. Delicious!
For lunch I made a really simple couscous and roasted vegetable salad; if you can’t get your hands on couscous, any other grain (e.g. lentils, quinoa, bulgar wheat) will work well too. I added toasted seeds, fresh mint, wild garlic pesto and feta to the roasted veggies for an incredibly easy, healthy and tasty meal. I’d always recommend doing a double batch so you have some for the next day too. This is a great one for using all the veg you have hiding at the bottom of your fridge, especially those ‘on the turn’.
We’re very fortunate to have an outside space and it really has come into its own during lockdown. The warm weekend weather felt like the perfect time to crack out the barbecue and cook up a feast for dinner. On the menu: George’s banging burgers. I love cooking al fresco and think it’s the nicest way to make the most of the longer, warmer evenings.
