Walnut, Ginger & Date Granola

This is one of my all-time favourite granola recipes; very simple, very easy, very nutritious and very delicious! I’d suggest making the base and then digging out what is in your cupboards and popping it in. This way you can add in all sorts of flavours, textures and colours. There are no rules to follow when making your own granola. From pears to pistachios it mostly all works!

To make two bags / 7 helpings
10oz oats
6oz honey
2 tsp vegetable oil
2 oz sunflower seeds
1 oz pumpkin seeds
2 oz cashews
1.5oz flaked almonds
1 tbsp chia seeds

20 pitted dates, chopped
3 oz raisins
1.5oz walnut pieces
1 oz stem ginger, chopped
1 oz dried cranberries

1. Preheat the oven to 180c.
2. In a large bowl, mix all of the base ingredients together until fully combined.
3. Place on a baking tray and cook for 15 – 20 minutes until crisp or golden brown. Set aside and leave to cool.
4. Once the base has fully cooled, add any additional ingredients.
5. Store in an airtight jar or container and enjoy with cold milk, yoghurt or fresh fruit to kick start your day.
